silver birch sap

Well, another first here at la maison! we’ve been drinking the sap collected by tapping a silver birch tree or two round the lake. At this time of year the sap is rising in trees and plants and in many parts of the world people in places like China, Russia and Scandinavia tap into trees to collect the sap to drink. It is apparently very good for you with an interesting mix of nutrients and minerals and can now be found on sale in swanky health clubs all over the place. You drill a hole in through the side of the tree and if you’ve got it right what is like water pisses out at quite a rate to begin with. You collect this through a tube into a bottle and hey presto.  It doesn’t really taste of much but does have a slightly sweet aftertaste. Interesting anyway!
